Grandpas Favorite Foods

 I talked to my grandpa, and I asked "Grandpa, what were your favorite foods you enjoyed in your childhood time?"

He thought for a second, and "said chapatti with sogi or Pappu, and uppudipindi. 

He would eat with roti with papu (lentils) or sogi(Indian pickle) and uppudipindi almost everyday after he came back from swimming.  

He loves fruits also, and all of them. 

Roti Recipe

Take how many ever cups of wheat flour you want. 

Heat up some water in a mug in microwave for one minute or warm up on stove. 

After you have heated up some water for a minute, you want to mix it with the wheat flour and wrap the chapati dough in a wet paper towel or cover with slightly wet towel. 

After you have wrapped the chapatti dough in a wet paper towel, you let it sit for 1 hour. 

After an hour,  take some small pieces of chapati dough and then roll it out and put it on the stove. 

Let the chapati cook for a minute on one side and when bubbles come up, flip and cook on the other side. 

Generally, "uppudipindi" is made with rice rava,  as it is made in many households of India but it is made with rice flour in my grandparents' home. 

This is my great grandparents favorite also, and they used mostly on every Saturday as morning breakfast. During the summer, seasons when mangos are available, they also have uppudipindi with mango pulp. My grandpa still loves to eat this dish, and now coming to the recipe, you can add some additional vegetables like onion. 

This is made similar to Upma. 

Uppudipindi recipe:

Seasoning(Mustard seeds, jeera, urad dal, cumin, and lots of channa dal) 

Make Indian seasoning in some oil in a dish pan, preferably non-stick.

Preferably the ratio of water is 1 to 1 1/2. 

After seasoning, put water in the pan.

Let it boil, and then add salt as per your taste. 

Then add rice flour. 

Reduce the heat and mix it. 

If you like onion, you can add it along with the seasoning in the beginning. 

Slowly mix until all the water is absorbed, break the big lumps, add a little bit more oil is needed and close the lid. 

Let it cook for 10 minutes, and mix in between.

When the texture is as per your liking it is ready, and you can turn off the flame.
